\nPenne with Sun-Dried Tomato Pesto<\/strong>

\nIngredients<\/u><\/strong>
\n12-ounces penne pasta
\n1 (8.5) jar sun-dried tomatoes packed in olive oil
\n2 garlic cloves
\nSalt and freshly ground black pepper (to taste)
\n1 c. (packed) fresh basil leaves
\n½ c. freshly grated Parmesan
\n
\nDirections<\/u><\/strong>
\nCook the pasta in a large pot of boiling, salted water until tender, but still al dente, stirring occasionally, about 8 minutes. Drain, reserving one cup of the cooking liquid. While pasta cooks, blend the sun-dried tomatoes and their oil, garlic, salt and pepper and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan. Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

\n2 pounds ground beef (80 percent to 85 percent lean)
\n1 tsp. salt
\n1 tsp. freshly ground black pepper.
\n8 thin slices provolone
\n4 good-quality hamburger buns, toasted
\nGreen Chile Sauce (recipe follows)
\nRomaine lettuce leaves, optional
\n4 thick slices beefsteak tomatoes, optional
\nPickled jalapenos, optional
\n
\nGreen Chile Sauce (place all ingredients in a blender and blend until smooth.)<\/em>
\n2 poblano chiles, grilled, peeled, seeded, and chopped
\n1 medium white onion, grilled and chopped
\n1 to 2 cloves garlic, chopped
\n2 T. chopped fresh oregano
\n¼ c. cold water
\n1 T. honey
\n¼ tsp. salt
\n¼ tsp. freshly ground black pepper

\nDirections:<\/u><\/strong>
\nHeat grill to high. Form meat into 4 burger patties and season each burger on both sides with salt and pepper. Grill until charred on both sides and cooked to desired doneness. Place 2 slices of cheese on each burger, cook until the cheese has just melted. Place burgers on bungs and top with a few tablespoons of Green Chile Sauce and lettuce, tomato, and pickled jalapeno, if desired.

\n1 apple, peeled and thinly sliced
\n1 lemon, juiced,
\n1 orange, juiced,
\n1 orange, sectioned,
\n¾ c. cranberry-grape juice frozen concentrate, thawed
\nPinch of ground cinnamon
\n3 c. seltzer water
\n
\nDirections:<\/u><\/strong>
\nIn a medium pitcher, make the sangria mixer by adding the apple slices and lemon juice to the pitcher and stir. Add in the orange juice, orange sections, cranberry-grape frozen concentrate, and cinnamon. Stir and let the mixture sit for at least an hour to allow flavors to meld. Just before serving, add the seltzer to the pitcher. Serve over ice.
